Wood: Hickory, Oak, or Mesquite; enough for 10 hours of smoking
Ingredients: 1 Rack of beef ribs
Ingredients: 3 Tbsp course salt
Ingredients: 3 Tbsp peppercorns
Ingredients: Your favorite Beard BQ Sauce
Heat the smoker to 225-250°F and if you smoker has a water pan fill it with water or beer as needed if not place an aluminum pan with water or beer on your smoker rack
Cut the rack lengthwise into individual bones and place them on a rimmed backing sheet
Slather the ribs with a very light coating of Beard BQ Sauce.
Sprinkle the ribs with salt and pepper
Place ribs in smoker fat side up with some room between each rib. Smoke the ribs until dark brown on the outside and tender inside which should take 8-10 hours
Transfer ribs to another baking sheet or foil pan loosely covered to set for 30min-1 hour
Just before serving slather with more Beard BQ Sauce and sprinkle you salt and pepper
