SMOKE BREAK: Beards on a budget



Chicken Noodle Soup

Yield: 6 servings

Ingredients

2 tablespoons butter

3/4 cup diced yellow onion

1/2 cup chopped celery

1 large clove garlic minced

1 carrot sliced

1 – 1 1/2 cups sliced green beans

1/2 teaspoon onion powder

1 tablespoon dried parsley

1/4 teaspoon pepper

6 cups chicken broth

1 1/2 rotisserie chicken diced

2 cups uncooked noodles

3 tablespoons melted butter

3 tablespoons all-purpose flour

Salt to taste

Instructions

In a large saucepan, melt butter over medium heat. Stir in the onion and celery. Sauté until the the onions become translucent. Mix in the carrots and green beans and, then cook for another 5 minutes. Add the garlic and cook for 1 minute, then add in the onion powder, parsley, and pepper. Cook for 30 seconds and add the chicken broth and allow it to simmer. Cook until the carrots and green beans are tender, approximately 25-30 minutes.

Add the noodles and chicken then cook or until noodles are tender, for another 10-12 minutes.

In a microwave-safe bowl, melt butter using the microwave and mix in the flour creating an easy roux. Add this to the soup, very slowly, whisking well as you go. Keep stirring until it is blended. Sprinkle in salt and pepper, then serve.
