Basic Chicken Salad

½ cup mayonnaise
1 tablespoon lemon juice
¼ teaspoon black pepper
2 cups cooked chicken meat, chopped
½ cup blanched, slivered almonds
1 stalk celery, chopped
Using a frying pan, toast the almonds over medium-high heat, shaking frequently. They burn easily, so watch closely.
In a medium bowl, mix together mayo, lemon juice and pepper. Toss with the chicken, almonds, and celery.
Old-Fashioned Chicken Salad Recipe
4 cups cooked chicken, chopped
1 cup chopped celery
2 hard-cooked eggs, peeled and chopped
1/4 cup chopped onion
2 tablespoons fresh lemon juice
Beard-BQ Rub of your choice, to taste
3/4 cup mayonnaise
Salt to taste
In a mixing bowl toss together the first six ingredients and half the mayonnaise. Cover and chill for two hours.
Before serving, mix in the remaining mayo and sprinkle with Beard-BQ rub.
