Good barbecue takes time, and, sometimes, it takes longer than expected.
You may have guests on the way and the meat is still stalled, or a hungry family tapping their toes with tummies rumbling…don’t lose your cool and potentially wreck your masterpiece in haste.
Some people think if it’s started on the smoker, you have to finish there, but sometimes life happens. You run out of time and or fuel, or Murphy and his stupid law interfere.
If that happens, try the Texas Cheat – which is basically where you smoke the meat a few hours, then wrap it in foil with the juice, before you finish it in the oven at 325°-400°F for a few hours until it’s ready. In the meantime, whip up a delicious appetizer and deal the cards. This is supposed to be fun. Enjoy the process and your people.
