There are a lot of factors involved in timing your masterpiece. Factors include the meat's cut - are there bones? What's the thickness and diameter? How much connective tissue and fat are present? Insulation on your smoker, the weather, humidity, altitude, and what type of smoker you’re using all play a part in the cooking duration.

Cooking your meat to the right safe temperature and keeping the heat steady will consistently deliver successful results.
