Don’t panic when the hours have crept by while the thermometer stayed the same for hours. Known as the stall, it’s perfectly normal, especially with brisket when it reaches an internal temperature around 165°F. That’s when the meat unlocks its moisture, which then evaporates, and causes the meat to cool. It’s all good.
